So I searched out some low sugar black bean brownies and found these. They are a lower sugar version of a flourless brownie. The main ingredients however are black beans and chocolate chips along with some sweeteners and an egg. I was able to do it all in my blender, which was a definite plus. Going in to the oven they looked and tasted pretty good. I subbed in honey for maple syrup because that's what I had on hand. Here's what Sunshine thought of the dough.
Well, they are good, but definitely a different type of brownie. DH didn't like them because they were too dark for him I think. Plus, they don't really set up. They are almost like fudge instead of brownies. Do not skip the chilling step. In fact, I had the rest of them today and they were better today after being in the fridge overnight than they were last night after being in the fridge for about an hour.
So these probably will not make our regular rotation of sweets, but they are interesting for something different. If I made these again, I would probably add some oats to make them bake more like cake. Or, I would just search out a different low sugar black bean brownie recipe with flour.
