I'm not generally a flan person, the texture is just a little too gooey or whipped or something for me. However, last night we had the missionaries over for dinner and I was doing Mexican. So I was looking for a Mexican dessert. Racer did Mexican Wedding Cakes and passed off a Scout requirement, but I wanted something more exotic. So I was searching and found this recipe and thought it sounded just interesting enough to try. It was a Betty Crocker recipe which always turn out well.
This was an interesting recipe to make. First, you grease your Bundt pan and then you pour caramel sauce in the bottom. After that, you make up the chocolate cake mix and add that to your pan. Over the top of that combination, you pour your flan mixture. The cake and flan kind of combine, don't mix it, they just combine on their own. When you pull your finished creation out of the oven the flan has gone to the bottom and the cake has risen to the top. Then you unmold it and you are left with this masterpiece.
I still don't love flan, but when you combine the chocolate cake with the flan, it is pretty good. It's almost like having pudding on top. I like it even better today because the flan isn't quite as . . . whatever it is. It's a little bit drier and I like it better.
If you like flan, you'll definitely like this recipe and if you don't like flan, let it dry out for a day or two and then try it.
We also had Slow Cooker Pulled Pork from Simply Recipes and it was amazing. Maybe a little heavy on the cumin, but other than that perfect. We had some leftovers, but only because I started with about 4 pounds of pork.
I'm looing at trying this recipe next for homemade survival bars. I'm a little skeptical that they will stay good for 20 years and I'm not sure how much nutrition they would give you, but it looks interesting and cheaper than buying any. I'm tempted to buy some oxygen absorber packs to see if the bars really would stay good that long.
